Tops of carrot roots turn green when exposed to sunlight. The root tops may become exposed when heavy rains or irrigation water wash away the soil. Soil may also be moved away during cultivation. The green portions of the root have a strong flavor. The orange part of the root is edible.
Cut away the green portion of the carrot before eating. Protect the carrot root tops in the ground by covering with a 1- to 2-inch layer of soil whenever exposed. Or mulch the plants with a 4- to 6-inch layer of straw or several sheets of newspaper to prevent water from washing away the soil. Do not cultivate closer than 6 to 8 inches to the plants.
